🍌 RUM AND RAISIN BANANA BREAD 🍌

Isolation is only good for three things:

🍽 Eating
🥃 Rum
And I’ve got one thing that will allow you to achieve ALL of the above … behold, my Rum and Raisin Banana Bread 🍌🍌
• 1/2 cup butter
• 3/4 cup brown sugar
• 2 large eggs
• 1 teaspoon vanilla extract
• 4 large ripe bananas, mashed
• 1 cup all-purpose flour
• 1 cup whole wheat flour
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1/2 cup rum — I used Rum Diary Spiced Rum & Raisin
To start, I baked my banana bread in my air fryer but for those who do not own one, you gotta preheat your oven to 180 °C. Get your pan nice and greased with butter. In a large mixing bowl, whiz together your butter and sugar until light and fluffy.
Beat in the eggs one at a time, mixing well between additions. Mix in your vanilla extract and mashed bananas. Pop in your flours, baking soda, baking powder, and salt. Then add the best part, your rum.

Transfer batter to the prepared pan and bake for 55 to 65 minutes (or 15 minutes in an air fryer).
Once baked, cool bread in pan for 10 minutes before removing and transferring to a cooling rack to cool completely. 😘
