RUM AND PISTACHIO WHITE CHOC FUDGE
INGREDIENTS
○ 395g can sweetened condensed milk
○ 60ml aged rum
○ 100g unsalted butter, chopped
○ 450g white chocolate chips
○ 150g unsalted pistachios
○ 120g dried cranberries
○ 100g glacé cherries
METHOD
1. Pop your cranberries and rum in a bowl and allow to soak for an hour.
2. Gently melt your condensed milk, butter, white chocolate and rum in a heatproof bowl set over a saucepan of simmering water.
3. Add the rummy cranberries, pistachios and 50g glacé cherries, and fold until melted and well combined. Be sure not to skimp in the pistachios. It may look a lot, but keep pushing through baby!
4. Grease and line the base and sides of a 20cm square cake pan with baking paper. Pour your creamy mixture into your pan and top with the remaining 50g cherries — watch out, it’s all very sticky at this point.
5. Pop in the fridge and chill until firm.
Once ready, indulge till you can’t indulge anymore.
