If you are looking to support wonderful Australian producers that focus on ethically, sustainably, and locally produced, then Lord Byron Distillery is the one for you.

Based in Byron Bay, this distillery is not only an absolute treat to visit, but knowing that this micro-distillery does everything it can to minimises its carbon footprint by utilising only renewable energy makes my drinking experience, more enjoyable.

I will go more into my visit of the Lord Byron Distillery in a later post, but let me just tell you, I left with two delicious bottles of alcohol during my visit, which gives you insight into how much I enjoyed myself.

One bottle I would like to draw your attention to is Lord Byron’s Silver. Double distilled, barrel strength white rhum which is deliciously ‘fresh’ and the perfect addition to a cocktail like a mojito!

To the eye: Clear and clean.

The nose: Burnt toffee with subtle hints of molasses and honey.

On the Palate: What a treat! Smooth, creamy and sweet with hints of spice. Give this time to fully open up and allow the layers to come through. She is a complex lady, so give her the time she needs to show herself, you will not be disappointed.

This would be bloomn’ divine in a mojito, pina colada or fresh apple juice and bitters.

Retailing on the higher side of the price spectrum at $80, but don’t let that scare you off. You’re not only paying for an amazing rhum, you’re paying for the love and care that goes into creating it.
